In Beijing we celebrate spring by making little pancakes to eat with a selection of dishes that symbolise the coming of spring.
Provisional menu
Spring pancakes with the following dishes
- Chicken with chilli oil dressing
- Cumin spiced lamb
- Three treasure stew (carrot, potato and yellow beans)
- Bean sprout salad
- Peanut with celery and wood ear mushroom (black fungus) salad
