Pork belly. Yum. This needs a ripe, round red with smooth tannins (as too much tannin will clash with the fat). Go for a new world - either Chile or New Zealand - Merlot or Pinot Noir.
For the Pudding we need something that will work with the creaminess of the Crème Brûlée. Try an Australian Botrytis Semillon or a classic Sauternes.
