The house I grew up in was next to the large fishponds of an old Benedictine abbey. I spent so long around the fishponds, having fires and walking my dog. There are sweet chestnut trees at the fishponds and I have fond memories of collecting chestnuts. Chestnuts are a true treasure of the autumn/winter season and I have always loved their sweet, nutty flavour.

Jack Goldstein is a chef and musician based in Margate, Kent. He is a nutritional chef for Haeckels, the natural skin care and wild fragrance company that produces products using seaweed harvested from the Margate coastline.

Madre opened its doors in December 2023 at the Margate Post Office building in Cecil Square. Sourdough breads take centre stage, from rustic country loaves to Italian-style focaccia, ciabatta and Madre’s award-winning dark chocolate sourdough, alongside a selection of Italian wines from small, independent artisan winemakers, imported by London-based Passione Vino.
